How to prepare coffee in a Moka pot (Italian)

The Italian Moka pot is a classic method for brewing intense, full-bodied, and concentrated coffee. It's easy to use and perfect for those seeking a flavorful cup without an espresso machine.

Basic Recipe

Coffee: fill the filter without tamping
Water: just below the valve
Grind: medium-fine, slightly coarser than espresso
Heat: low-medium
Time: approx. 3–5 minutes

Step-by-step

1. Add water
Fill the bottom chamber of the Moka pot with hot water until it's just below the safety valve.

2. Add coffee
Completely fill the filter with ground coffee and gently level the surface.

Do not tamp. The Moka pot needs water to pass through the coffee easily.

3. Assemble the Moka pot
Place the filter and screw on the top chamber securely.

4. Place on heat
Use low or medium heat and leave the lid open to monitor the extraction.

5. Remove in time
When the coffee starts to flow continuously and you see the stream begin to lighten or hear the characteristic gurgling sound, remove the Moka pot from the heat.

Avoid leaving it until it boils completely, as this can lead to more bitter flavors.

6. Stir and serve
Gently stir the coffee in the top chamber before serving for a more uniform cup.

Want to adjust to your taste?

Too bitter → lower heat / slightly coarser grind / remove sooner.
Too mild → slightly finer grind.
Flows too fast → try a finer grind.
Takes too long to flow → use a coarser grind and check that you haven't tamped the coffee.

Which coffee do we recommend?

The Moka pot works especially well with coffees that have a sweet, intense, and fruity profile.

Natural Ethiopian coffees can offer a full-bodied cup with notes of ripe fruit and chocolate, while washed coffees can yield a more clean and aromatic result.

Our recommendation

The secret to a good Moka pot is not tamping the coffee, using low heat, and removing it before it starts to boil aggressively.
