Presentation: The figure of Juan Manuel Hidalgo looms large in Jerez, like a coastal Don Quixote who has tilted at windmills to bring to fruition the monumental soleras he inherited from his father. This fino is the first step, essential for understanding the ladder to heaven that will lead us to enjoy some of the Hidalgo winery's truly exceptional wines.
Viticulture and production: The grapes are hand-picked. The barrels are only filled to a certain point (85% maximum) to allow the characteristic flor (a layer of yeast) to develop, which hermetically seals the wine and gives it the specific aroma of sherry. Once the wine has matured, it is transferred to the traditional solera system.
Approximate dynamic aging of 6 years under a veil of flor.
Tasting notes: Straw yellow in color. We noticed a pungent yet elegant aroma. Notes of acacia, walnut, and honey. On the palate, it is pleasant, light, and leaves a pleasant aftertaste.
Due to logistical difficulties and the possibility of damage by third parties, wines are not shipped; they can only be picked up in store . Keep this in mind when placing your order.
