Origin (DO) : Cadiz
Store : Alonso Wineries
Grapes : Palomino Fino
Wine Type: Pasture wine
Preparation : 8-year upbringing

Presentation: Within the new, exclusive line of pasture-aged wines presented by the Alonso brothers is Miraflores, a name that refers to the estate where it originates, thus highlighting the finest expression of this vineyard. The philosophy is to subject unfortified Palomino Fino grapes from different vineyards in Jerez Superior to an extreme process of biological and oxidative aging, observing how they maintain their identity of origin and terroir typicity.

Viticulture and Winemaking: Vineyard planted in the 1970s. Located in the municipality of Sanlúcar de Barrameda, it faces southwest at an elevation of approximately 45 meters, on Albariza soils in Anteojuela. The vineyard is exposed to cool ocean breezes year-round. Early harvesting is encouraged to maximize freshness and fruit expression. The hand-picked grapes are transported to the winery in 12-kilo crates and sorted. They are then destemmed and gently pressed. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks. A slow, low-temperature fermentation is carried out with meticulous care throughout the entire process. In the winter of that year, the wine is racked and transferred, along with its fine lees, to 38-arroba casks. A long, intense, static aging process follows, with both intense biological and oxidative phases. The wine is aged naturally. It spends 60 days in the bottle before release.

Aged for 8 years in an old 38 arroba cask that previously held manzanilla from Sanlúcar
