Origin (DO) : Ribera del Duero
Store : Dominio de Elbio
Grapes : Tempranillo, Merlot and Cabernet Sauvignon
Wine Type: Red
Preparation : Aged in French oak

Presentation: A free and unconventional interpretation in Ribera del Duero. At an altitude of 860 meters in La Horra, the finest vineyard area, Salvio is born, redefining the concept of freshness with aromas of wild berries and balsamic notes. The Salvio label is adorned with the image of a magical bird, a chimera composed of many bird species. This chimera symbolizes the magic of the vineyard nestled in the forest from which it originates, representing the biodiversity and unique environment of Dominio de Elbio.

Viticulture and Winemaking : The Dominio de Elbio vineyard is located in the heart of the "magic triangle" of La Horra, Anguix, and Roa, an area renowned for its exceptional terroir and rich winemaking history dating back to the Celtiberians. The Tempranillo, Merlot, and Cabernet Sauvignon vines are situated between 700 and 1100 meters above sea level. The clay-limestone soils, rich in iron and limestone, offer exceptional drainage. Together with the extreme continental climate and the altitude, they create ideal conditions for high-quality grapes. Each section of the vineyard is cultivated individually, reflecting the essence of the terroir. The wine has been aged in French oak barrels and partly in concrete, with variations depending on the vintage, adding depth without sacrificing the purity and freshness of the grapes. The focus is not on the length of time spent in oak, but on quality; therefore, there is no mention of aging on the label.

Aged in French oak barrels.

Tasting notes: Visually, it stands out for its garnet red color. On the nose, it offers notes of violet and abundant aromas of red and black fruit, licorice, and a mineral and spicy background. It has a fresh and flavorful entry on the palate, with a marked acidity. It is notable for its balance between vibrant fruit and subtle hints of oak.

Recommended pairings : All types of meat, especially red meat and stews or roasts. Rich and flavorful sauces, whether meat-based or red wine-based. Particularly good with grilled foods. Season dishes with sweet spices, spices, Mediterranean herbs, and, if they are more complex, mushrooms. Pasta with robust sauces such as a beef ragu. Rich and flavorful meat-based rice dishes.

Due to logistical difficulties and the possibility of damage by third parties, wines are not shipped; they can only be picked up in store . Keep this in mind when placing your order.
